Consistently a Myth.
Consistency in coffee brewing is a myth. Amazing home brewers serve themselves, a few friends or family know this fact for any coffee.
As a little café in this beautiful city of George Town, Penang, this fact is even more significant.
A kind patron's deliciousness isn't universally accepted by majority of the other customers.
The roasted coffee changes on daily basis across weeks.
The water is extremely soft and may change depending on whether Penang state is drawing more water from the river or dams. Water impacts brewing.
Barista is a challenging job because it's 1-to-many customers. If we forcefully inject too much of what we believe as delicious, majority of customers from 10s to late 80s won't appreciate it.
Someone in their 50s won't appreciate the exact same coffee as someone in their youthful 20s.
A simple coffee can be expressed into many different forms of deliciousness according to that customer at the moment hy adjusting our brewing parameters.
Brewing coffee oneself is one of the easiest job on Earth.
For many with over 10 years of working coffee experience, there's beauty in inconsistencies but consistently delicious but in different forms. The Japanese Wabi-sabi philosophy truly reflects the nature of the job.
If every meal, every spoon are exactly the same, it's monotonously boring. The mind experience no novelty.
If everyday is exactly the same, life is boring.
Change, challenge and inconsistencies are part of nature and being alive.
Coffee is inconsistent.
Humans are inconsistent.
Nature is inconsistent.
And that's exciting part of being alive.
