This Tomahawk comes from Queensland, Northern Australia, an Angus × Wagyu cross, grain fed and selected for its marbling, texture and flavour.

But selecting a good piece of beef is only the beginning.

At Firewood, we believe time can change the character of meat. So instead of rushing it to the grill, we give it time to develop carefully dry aged in house.

There is something special about watching a piece of beef transform over time. The exterior darkens, the flavours become more concentrated, and what eventually reaches the grill is no longer quite the same piece of beef that arrived at our door.

After being part of the World's Best Steak Restaurants , the responsibility to understand what we serve feels even greater.

A great steak doesn’t begin with the chef, the butcher, or even the fire.

It begins much earlier.

With the land.
With the cattle.
With the breed.
With the feed.
With the farmers who make countless decisions long before we ever see the meat.

Coming back to the farms gives me a different perspective every time.

Because the more I learn, the more I realise how much there is still to understand.

For Firewood, this is more than sourcing great beef.

It’s about knowing its story, respecting its journey, and bringing that understanding all the way to the table.

At Firewood, we don’t believe there is one “best” steak.

Different breeds, different cuts, different marbling, different textures, each one has its own character.

My journey doesn’t stop at the kitchen. I spend time searching for the right beef, working with producers and suppliers, and bringing these exceptional cuts to Malaysia. 🇲🇾

My job is to understand the beef, respect the fire, and find the one that is most suitable for you.
