We left Tulum for three months last year. Not obsessively watching the cameras all the time. No daily check-ins. No panic.

People always ask how we did it. The answer lives in something quieter than technology. We built Liefs around people who believe what we believe: that kindness matters, that animals deserve better, that every meal is a chance to choose compassion.

My grandfather thought I was throwing my degree away on a food truck. He was not entirely wrong about the risk. He just could not see where it was going.

I had spent years studying Industrial Design Engineering, then History, then working as an engineer in Houston. On paper, everything pointed forward, upward, safely. Instead I stood in a small kitchen with Fem, building something with no investors and no plan B.

That truck became Liefs. Seven years later it is a zero-waste, fully plant-based place in Tulum, and the same values from that kitchen are now what I put on my daughters’ plates every day.

The degree was never wasted. It just ended up somewhere nobody in my family expected, including me.

We were told we needed them. That without animal products, we’d lack something essential. But the evidence tells a different story.

Our bodies evolved to tolerate moderate amounts of animal products, yes. But we don’t need them to survive. A growing body of independent, peer-reviewed research concludes we are healthier without them.

Plant-based eating is associated with lower rates of chronic disorders: hypertension, diabetes, heart disease, inflammatory bowel disease, kidney stones, and several cancers. Populations who eat primarily plants live longer, with fewer chronic conditions.

Even conservative institutions like the FDA, the American Dietetic Association, and Oxford University recognize plant-based diets as healthy in all stages of life. The science keeps leaning in the same direction.

What does well by the animals and the planet also does well by our bodies. That’s the wholesome, beautiful truth.

When we arrived in Tulum in 2019, we had a vision but no restaurant, no staff, no certainty. We started with festival pop-ups, and slowly, people began to join us.
