Santa Clara Restaurant & Beach Condo Our Specials: Pollo al Barro and Chiles en Nogada It is said that this dish was invented in the 1800s by nuns in the town of Puebla.

Pollo al Barro: Gandmom´s recipie, full chicken seasoned with a mix of dry chiles and cover in clay, is cooked in wood oven for five hours; this excellent dish would feed 4 people, is served with guacamole, frijoles, salsa y tortillas. Chiles en Nogada: The chile en nogada is a traditional Mexican dish made with poblano chiles stuffed with a mixture of meat and dried fruits, covered in walnut sauce, and garnished with pomegranate seeds and parsley.
