Our new garden at Samos is more than a beautiful addition to the space. It is a commitment. A decision to be closer to our ingredients, to the seasons, and to the responsibility we carry as a restaurant.

Chef Nayeli Caballero shares this vision through every harvest. By cultivating herbs and select produce on site, we shorten distances, reduce impact, and allow nature to guide the creative process in the kitchen.

A taste of the coast, brought to the city.

This dish carries the spirit of Baja, bright, saline, sun-driven, translated through a precise curing technique reminiscent of gravlax, gently denaturing the fish to enhance its texture and depth.

Kampachi cured with activated charcoal anchors the plate, delicate yet structured. Avocado mousse adds creaminess, while criollo cilantro and chiltepín water introduce freshness and subtle heat. A raspada tostada brings crisp contrast, finished with a touch of mango sorbet for a vibrant, unexpected lift.

Some classics evolve with the seasons.

Over time, our French Toast has taken different forms at Samos, each one layered, indulgent, and memorable in its own way. From comforting textures to vibrant fruit-forward expressions, every version has reflected a moment at the table.

This season, we welcome a new creation.

Our latest French Toast begins with brioche, filled with red berry cream and finished with a delicate cereal crust. Dulce de leche bananas add warmth, while blueberries bring brightness. Lemon mascarpone cream balances each bite, complemented by caramel sauce and pumpkin seeds glazed in dulce de leche.

At Samos, sustainability is not a statement, it’s a daily commitment.

Part of our vision grows within the property itself, in our on-site gardens, where we cultivate selected herbs and greens that make their way into different dishes across the menu. In this moment, Chef Nayeli Caballero connects directly with that process, from cultivation to creation.

Cooking with what we grow allows us to stay close to the product, reduce our footprint, and approach each plate with greater intention.

Some collaborations are announced. Others are felt long before the first plate reaches the table.

From April 9 through April 11, our Chef Nayeli Caballero opens the doors of Samos to welcome the chefs of Propio, Shary Romo and Alex Chávez for a takeover shaped by depth, character and origin.

This is Mexican cuisine expressed with clarity and intention. Contemporary in its movement, rooted in its soul. Each dish honors memory while embracing evolution, revealing a cuisine that renews itself without ever losing its essence.

At Samos, hospitality is not an accent, it is the foundation. Over three days, our dining room becomes a shared table where craft, generosity and conversation unfold naturally from afternoon into evening, from 1 pm to 10 pm.
