Our Puttanesca Sauce

Ingredients required

40ml (2 tablespoons) olive oil
3 garlic cloves, chopped
1 or 2 small red chilli, finely chopped (don't over do it)
100g drained green olives stuffed with anchovies, sliced
75g drained pitted black olives, sliced
6 semi-dried tomatoes, cut into thin strips ( food lovers has them)
2 tablespoons salted capers, rinsed
425g can diced tomatoes
400g spaghetti
1/2 cup fresh basil leaves, shredded
freshly grated Parmesan, to serve

First step

Heat oil in a frypan. Add garlic and chilli and cook over medium heat for 1 minute. Add the olives, semi-dried tomatoes, capers and diced tomatoes and simmer for 20 minutes. Season with pepper. Cook pasta according to packet directions.

Second step

Drain and return to pan. Add sauce and basil and toss together. Serve generously sprinkled with Parmesan and fresh ground black pepper.( we use no salt in this recipe)

Should you require something a little more carnivorous this works with marlin and tuna steaks chicken or beef
