The Risette Ravioli was born from memories that never faded; of family gatherings, shared meals, and a woman whose love was expressed through food. Auntie Risette's influence lives far beyond a name; it lives in the values, traditions, and sense of togetherness that continue to shape everything we do.

For Matthew, this dish is a tribute to those moments that define us. The flavours of Maltese sheep cheese, tomato, and basil are more than ingredients, they are fragments of a story, a connection to the past, and a way of keeping cherished memories alive.

For Steve, the challenge was not simply to recreate a dish, but to honour its soul. To elevate it through craftsmanship and technique while preserving the emotion at its core.

Because sometimes the most meaningful dishes are not the most complex. They are the ones that remind us where we come from, who we love, and why food has the power to bring us together.

This is more than ravioli.

For our Four Hands Dinner, we were honoured to welcome Michelin-starred chef Pascal Barbot of Astrance, a globally recognised name in contemporary fine dining and a pioneer of refined, ingredient-driven cuisine. His approach, rooted in precision, seasonality, and creativity, had long defined the standards of Michelin-level gastronomy.

Joining Risette’s own Steve Scicluna, the collaboration brought together two distinct yet complementary culinary perspectives. Together, they crafted a carefully curated menu centred around fish, showcasing technical excellence, balance, and a deep respect for ingredients. Each dish reflected a dialogue between their styles, combining French finesse, modern technique, and a shared commitment to delivering a thoughtful and elevated dining experience.
