In 2024, Chef NONI was selected as an ambassador chef for here in Malta. Two years later, we were invited to Champagne, in France, for Les Battles des Chefs, where the brand's ambassador chefs from around the world cook against one another.

Winning is not everything. But when we compete, we give our hearts to it, to make Malta and our small restaurant proud. We gave it our best, we came home with the win.

It is a win we carry for Malta more than for ourselves, and a quiet pride in carrying the name of our island into rooms that do not always know it.

We are very grateful to Nicolas Feuillatte and their team for their warm hospitality and the wonderful champagne that brought chefs from across the world to the same table.

The most significant part of this trip had nothing to do with festivals or press dinners. It was about meeting people, about family.

Coming back to see my sister felt like finally arriving home. After all the miles travelled and the intense energy of the kitchens, being with her was the moment that mattered most. It was a chance to disconnect for a moment from the chef and simply be a brother again.

Out of every experience on this long road through Australia, this is the one that sits closest to my heart. It reminded me that no matter how far you go or what you achieve, the people you love are the true destination.

This journey to Australia was more than just a series of events. It was a reminder that while our islands are small, our story is universal. I returned to Valletta with a renewed sense of purpose and a deeper pride in what we do every day at NONI.

Going back to a place that once saw me as a young chef looking for a start and returning to find such a warm welcome for our Maltese heritage has been a full circle moment. We are back in our kitchen now, inspired by the people we met and ready to keep pushing the boundaries of what our cuisine can become.

Thank you for following along with these diaries. The road continues and I am glad to have you with us for the next chapter.

The most surprising part of Melbourne was meeting the Maltese community there. I was moved to find so many people who already knew about NONI and followed what we do from afar.

They came to the dinner looking for a taste of home and a sense of nostalgia. Seeing them connect with each other over our food was deeply humbling.

We didn't just serve a meal we provided a bridge back to their roots and inspired others to one day visit Malta for themselves.

Being the first Maltese chef invited to the Melbourne Food & Wine Festival was a true honour.

This was a different challenge because the menu was entirely mine. The festival was incredibly well organised and seeing the event sell out for all three days was a moment I will always cherish.

It was a clear sign that people are hungry for our culture and our way of cooking even on the other side of the world.

One of the highlights of the trip was the press dinner we held in collaboration with Visit Malta. I am extremely grateful for their support and for the way they champion our local restaurant scene on a global level.

It was a proud moment to stand there and share our vision. This event set the stage for everything that followed and allowed us to show the international community exactly what our islands are capable of.

There was a running joke throughout the week that Shane Delia and I are brothers. While I do not see much of a resemblance aside from our shared choice of hairstyle, the connection we felt in that kitchen definitely made us feel like family.

It proves that the bond between chefs goes beyond recipes. It is about a shared work ethic and a mutual respect for the craft that makes working together feel completely natural.

Walking into Maha Restaurant felt like walking into a kitchen I had known my whole life. Shane Delia and I are old friends and that level of trust makes everything feel natural.

His team treated us like their own from the second we arrived. It is a rare thing to travel so far and feel like you never left home.

It is fascinating how travel changes your perspective on the value of what grows in the ground.

In Sydney, I realised that some of our most humble local elements are seen as rare luxuries. Take fig leaves, for example, in Malta, they are everywhere, a natural part of our landscape that we almost take for granted. Yet in Australia, they are a prized, expensive delicacy.

On the other hand, Australia has shellfish and premium proteins that are nearly impossible to find fresh back home, or come at a very high cost in Malta. It’s a reminder that every land has its treasures. Sometimes you have to travel halfway across the world to realise that what we consider ""common"" is someone else’s luxury, and what we struggle to source is their everyday bounty.

It makes you respect the journey of the ingredient even more.
