Hammet’s Monastik reflects a modern interpretation of Europe’s monastic traditions through a structured sustainability strategy focused on local sourcing, waste reduction, and responsible operations.
Through food waste tracking, nose-to-tail cooking, and preservation techniques, it strengthens local supply chains. This commitment led to recognition through the Horeca Zero Waste Program and EcoCook certification in 2025, an international standard supporting sustainable sourcing and energy efficiency. EcoCook provided a targeted framework and goals such as increasing organic produce and sustainable fish, using organic eggs, introducing a fully organic dish, and expanding ecological cleaning products, reducing emissions.
The use of technology and staff training further enhance efficiency, guest experience, and innovation so that culinary heritage can be blended with forward-thinking practices.
