Meet Joshua, the mixologist and creative mind behind the bar at Ta’ Vestru.

Back in 2021, it was a simple suggestion from Joshua’s brother (and Ta’ Vestru Head Chef) Nigel, that initiated his journey into mixology. “I didn’t take it seriously at first,” Joshua says. “But we bought a bunch of ingredients, went home, and started mixing. And that was it. I was hooked.” What started as an impromptu home bartending session quickly evolved into a serious passion project.

Joshua has since dedicated himself to the craft: studying, experimenting and developing a cocktail menu that reflects both technical skill and personal creativity. His approach is rooted in freshness, using as many seasonal local ingredients as possible and ensuring that every drink pairs beautifully with the food coming out of the kitchen. From hand-crafted syrups to perfect ice, no detail is overlooked.

Joshua’s cocktails tell a story of discovery, dedication and a deep love for the craft.

His signature? A welcoming smile, a perfectly balanced Old Fashioned you’ll think about long after the last sip and a bar that feels like home.
