Our chef's interpretation of the Caesar salad.

Rather than serving it in its traditional cold form, he chose to reinvent this classic as a warm dish.

Warm Caesar dressing, topped with tempura-fried veal sweetbreads, torched baby gem lettuce, and slices of Nelli's bresaola - produced by a Gozo-based company using locally reared breeds.

Traditional patterned tiles have been a distinctive feature of many homes across Malta and Gozo for generations.

Inspired by these timeless designs, our Head Chef, George Attard, wanted this heritage to become part of the Level Nine experience.

To bring this vision to life, he partnered with a local ceramic artist - Hermine Sammut - to create a collection of unique plates exclusively for our canapรฉs.

Alongside the traditional tile patterns, they also feature the Maltese Cross, another important symbol, as a tribute to our islands ๐Ÿ‡ฒ๐Ÿ‡น
