INGREDIENTS: 🐙
Tender octopus, with a few tricks up its tentacles,

A generous helping of garlic to ward off evil spirits (or the occasional person we'd rather not bump into! 😂),

Extra virgin olive oil to keep the heart happy & healthy,

Freshly chopped local tomatoes to sweeten the deal,

Fresh herbs for a touch of virtue,

A cheeky squeeze of lemon to keep everyone on their toes; and a whole lot of sass & temptation!! 😏

SERVING SUGGESTION:
Serve with Maltese bread or crunchy ftira on the side, to mop up every last drop…because, dear reader, licking the bowl in public is apparently frowned upon!!!!

Some people have absolutely no sense of adventure!! 😂

Some things simply don’t need improving!! They just need plenty of sauce. ❤️

Ricotta-filled ravioli, smothered in a garlicky tomato sauce & topped with fresh basil & parsley.
No twists. No reinventions. No unnecessary nonsense. Zero Drama.

Trends may come and go, dear reader. Ravioli couldn’t care less!! 😂

Not all ġbejniet (local cheese) were destined for the cheeseboard. 😏 Some, it seems, have rather more wicked intentions 😂

Deep-fried until golden, coated in pistachios & breadcrumbs and served with a honey-mango & sesame seed dressing.❤️

Restraint, dear reader, is terribly overrated 😜 🤣

Tadam🍅or kunserva?!!!

Now this could start an argument in a Maltese household. 😂

When it comes to a good piece of ħobż Malti (Maltese bread) what are you reaching for?

Kunserva (tomato paste) spread nice and thick…

OR

a ripe tomato rubbed straight onto the bread?!

Today Malta celebrates 62 years of Independence. 🇲🇹 So Happy Independence day from all of us at Ta’ Kris. 🇲🇹❤️🍷

I don't why, but sometimes Sundays or public holidays seem to transport me back to Nanna’s kitchen. She was happiest when she was feeding the people she loved, and I promise you... there was always enough food on that table for half the street. 😂

One of my favourites will forever be her majjal bil-patata fil-forn (roast pork with potatoes). The potatoes, to me, were the star of the show, simply to die for!! Charred around the edges, golden and soft inside, they would soak up all those beautiful pork juices, and the sweet fragrance of fennel seeds is still so vivid in my memory that I can almost taste them.

Perhaps that’s why Maltese food means so much to us at Ta’ Kris. Because sometimes a taste is never just a taste. It takes you back to a kitchen you haven’t stood in for years, to people you would give anything to sit around a table with again, and to a Malta that lives on in our memories. ❤️

How do you remember spending your Sundays or public holidays when you were younger? What food brings those memories flooding back?

Our Special of the day. - Lamb Shank!! Slow cooked with warm Middle Eastern spices and served with a rich lamb jus infused with peppermint tea.

A little unexpected, beautifully tender and absolutely delicious.

And no... the tea does not come with a biscuit. 😂❤️

The first grey skies arrive almost unnoticed. The blue disappears behind heavy clouds and the first drops of rain fall onto stone that has been baking in the sun for months.

And then comes that smell.

Warm earth, wet limestone, dusty streets suddenly washed clean… a scent we seem to have forgotten, yet recognise instantly.

It is still warm, of course. Still humid. Step outside and September quickly reminds you that summer has not finished with us just yet.

But something has changed.

The light is softer. The air feels different. And hidden somewhere behind those grey clouds is the first little promise of cooler days to come. Soon, the evenings will become gentler. Funny how the weather can change the way we crave the very same food.

The rabbit we slow-cook in red w**e all year suddenly feels a little more comforting. The stews bubbling away in the kitchen seem more inviting. The smell of garlic and rosemary somehow warmer. And that piece of Maltese bread dipped into a rich sauce… well, that never needed an excuse. ❤️

Nothing has changed in our kitchen. We’re still cooking the food we love, the way we always have.

But outside, Malta has given us the first little whisper that another season is waiting.

And perhaps that is the real pleasure of these first grey skies: they make you want to slow down, linger over lunch or dinner, pour another glass of w**e and stay at the table just a little longer ❤️

Lampuki season is here!

There are some foods that are simply part of the Maltese calendar, and lampuki are definitely one of them.

Fresh, local and only around for a short season — which makes us appreciate them even more.

Whether you like your lampuki grilled, pan-fried, baked or in a traditional torta, everyone seems to have their favourite way of eating them.

How do YOU like your lampuki? ❤️
