Last week, the Sushi Camp held in Casablanca and Rabat was successfully completed.

To all the participants: thank you so much for trusting our very first attempt and for keeping up with our extremely tight and intensive curriculum.

To those who, unfortunately, could not join this time: we truly hope you will take part in a future session.

Hello everyone. Today, I would like to talk about the meaning of "粋 -iki-", which is the name of our store.

First of all, according to the dictionary, iki means “a person who has a clean temperament, demeanor, appearance, etc., and is at the same time sexy. Have a good understanding of the subtleties of human emotions, especially male-female relationships. Also, that. 》.

Also, it was originally a word expressed by another kanji called "意気 -iki-'', and it is a word that expresses "motivation'' and "mindset'' such as "spirit'', "enthusiasm'', and "cheeky''.

In that sense, "iki" has various meanings such as positive and mature coolness. I chose this word because it fits the image of the person I am aiming for and the atmosphere of the store.

【粋ってどういう意味?】
みなさんこんにちは。本日は、当店の店名になっている"粋 -iki-"の意味についてお話したいと思います。まず辞書によると粋とは、《気質・態度・身なりなどがさっぱりとあかぬけしていて、しかも色気があること。人情の機微、特に男女関係についてよく理解していること。また、そのさま。》とあります。また本来は“意気 -iki-”という別の漢字で表されていた言葉であり、「意気地」「意気込み」「生意気」など、“やる気”や“心構え”などを表していた言葉である。という感じで、"粋"には様々なポジティブで大人なカッコよさみたいな意味が含まれています。私の目指す人物像やお店の雰囲気にぴったりなので、この言葉を選びました。

Hello everyone. Today, I would like to introduce one of the representative Japanese dishes, tempura.

Tempura, along with sushi, is one of Japan's favorite dishes from the Edo period (AD 1603-1867). But its roots are a little different from sushi.

In fact, tempura is said to have come from Portugal. The ingredients are coated with a batter of flour and egg and fried in oil. We learned this cooking method from a Portuguese missionary, and since then it has evolved in a way that is typical of Japan.

In Europe, deep-fried food is often seasoned in batter or dipped in a rich sauce, while Japanese tempura is simply be sprinkled with some kinds of salts. When it comes to cooking, the simpler it is, the better the taste of the ingredients. The fresher the vegetables and fish, the better the tempura will be.

The first thing I noticed when I started living in Morocco was that vegetables are delicious. It seems that the amount of pesticides is less than in Japan, and the amount of rainfall is less, so the vegetables are growing vigorously.

Tempura is a Japanese dish, but it may be tastier if Moroccan ingredients are used instead of Japanese ingredients.

みなさんこんにちは。本日は代表的な日本料理である天ぷらのご紹介です。天ぷらも日本では寿司と同じく江戸時代(AD 1603~1867)から愛されている料理の1つです。しかしそのルーツは寿司とは少し違います。実は天ぷらはポルトガルから伝わったと言われています。小麦粉と卵を溶かした衣を食材に纏わせ、油で揚げる。この調理法をポルトガルの宣教師から学び、そこから日本らしい進化を遂げました。と言うのも、ヨーロッパの揚げ物は衣に味付けされていたり濃厚なソースをつけて食べますが、日本の天ぷらはシンプルに塩をつけるだけだったりします。料理というものは、シンプルであればシンプルであるほど、素材の味が引き立ちます。野菜も魚も、新鮮であるほど美味しい天ぷらが出来上がります。私がモロッコで生活し始めてからすぐに思ったことは、野菜が美味しいということでした。日本よりも農薬の量は少なく、そして降水量の少なさから野菜が力強く育っているからだそうです。日本料理である天ぷらですが、日本の食材よりモロッコの食材を使った方が美味しく出来上がっているかもしれませんね。

Hello everyone! This is Shoki, the owner and chef of Authentic Japanese Sushi -iki-. Today, I would like to introduce three things that I would like to promise to our customers. These are more concrete representation of our concept of "Reproduction of a Japanese sushi restaurant".

The first is to "provide authentic Japanese food". Our strength is that we purchase seasonings and tableware from Japan. This makes it possible to reproduce a full-fledged sushi course. In addition, we will offer a variety of dishes that can only be eaten here in Morocco, starting with standard appetizers at Japanese sushi restaurants, tempura, chawanmushi, and matcha sweets.

The second is to “provide a Japanese space”. This time, I was particular about the counter seats in the store. The inside of the 8-seater counter seats is the kitchen, and the food cooked in front of you is served to customers as it is. In addition, the interior, walls, floors, and tableware have been devised so that you can enjoy the atmosphere of Japan as much as possible.

The third is "Japanese chef's hospitality". I, Shoki, graduated from Tsuji Culinary School in Japan and have over 8 years of experience working in a wide variety of restaurants, from Kaiseki (Japanese traditional multi-course meal) to Italian. I will be responsible for all of our dishes. We will do our best to make your dining experience enjoyable while talking over the counter.

みなさんこんにちは。Authentic Japanese Sushi 粋 -iki- オーナーシェフのShokiです。本日は私がお客様にお約束したい3つのことについてご紹介させてください。当店のコンセプト“本物の日本の寿司屋を再現”をより具体的に表したものです。まず一つ目は「本格的な日本食を提供すること」です。当店の強みは、調味料や食器を日本から仕入れていることです。それにより本格的な寿司コースを再現可能にしています。また日本の寿司屋でも定番の前菜から始まり、天ぷら、茶碗蒸し、抹茶のスイーツなどモロッコではここでしか食べられない料理の数々を提供いたします。二つ目は「日本の空間を提供すること」。今回特に拘ったのは、店内のカウンター席です。8人掛けのカウンター席の内側はキッチンになっており、目の前で調理した料理をそのままお客様に提供します。また内装や壁・床・食器にも、可能な限り日本の雰囲気が味わえる工夫をしました。三つ目は「日本人シェフがおもてなしすること」。私Shokiは、日本の辻調理師学校を卒業しており、懐石料理からイタリアンまで多種多様のレストランで合計8年以上勤務した経験があります。当店の料理は全て私が責任を持って提供させて頂きます。カウンター越しにお話ししながら、楽しいお食事の時間をお過ごし頂けるよう努めます。以上、3つのお約束をお守り致しますので、どうぞ安心してご来店くださいませ。あなたにお会いできるのを心待ちにしております。

There are various kinds of modern sushi. Nigiri sushi, chirashizushi, makizushi, hand-rolled sushi, pressed sushi... In addition, even among these types, by changing the ingredients, it changes into various types of sushi.

Nigiri sushi originated in Japan during the Edo period (AD 1603-1867) and remains one of Japan's favorite dishes to this day.

Hello everyone! Authentic Japanese Sushi -iki- takes reservations only for the dinner course.

The reason is to keep the freshness of the seafood used in the authentic sushi course. The dishes offered in the sushi course change daily depending on the season and the situation of the fish market that day.

So, as a chef, I make the best choices every day and then rearrange the dishes.

This is called "Omakase" at Japanese sushi restaurants.

Our concept is to "reproduce an authentic Japanese sushi restaurant", so we will serve it in an "omakase" style at Authentic Japanese Sushi -iki-.
