I am a member of numerous curry /cooking groups and the main thing that puzzles me is the amount of people that admit they cannot cook rice. It really bermuses me.
This is foolproof.
In a pan with a tight fitting lid put in equal quantities of a good quality rice (basmati) and cold water. (no need to rinse the rice)
Add a pinch of salt(important) and a little piece of butter or splash of oil (not so important but I like the taste of the butter)
Let the rice soak for 20 to 30 minutes.
Turn the heat on full with the lid on and let the rice boil for 1 minute then turn down the heat to the lowest setting and steam for 15 minutes.
Job done ❤️❤️❤️

Slightly off topic for the Pot but tomorrow I am entertaining good friends and this is one of my favourite go to's
Ragu with pappadelle(please don't use spaghetti)
Step 1.a couple of chopped shallots, carrots and celery (soffritto)
Sweat them on a low heat in extra virgin olive oil for about 40 minutes.
Turn up the heat to medium and brown the beef/pork, about 10 mins (I find crumbled up good quality burger meat to be the best but feel free to use ground meat)
Add a couple of glasses of red wine and reduce until there is no liquid (about 15 minutes)
Italians can shoot me now, but if you can get your hands on some marmite (amazon or maybe stockman) add a couple of tea spoons.
Add a tin of good quality tomatoes and passata,wash out the jars /tins with water and add that, season with salt and pepper to taste and simmer for about 5 hours. Take the lid off towards the end as the ragu should be quite dry in my opinion.
The perfect ragu is now yours to do what ever you want ❤️❤️❤️
