Everything began with a small roaster and seven bags of green Columbian “Excelso” beans. Not long after, a second batch of “Excelso” arrived. It was then clear that not all “Excelso” beans were equal – not only is the name important, but the quality of each bag must be watched. Coffee beans were successfully roasted and little by little went out to restaurants and cafes. However, talk of the importance of freshness, the differences in quality and flavour, was not convincing everybody, but for us, the most important thing was and still is to take part in the entire process. Seeking our own perfection. We’re only interested in that which has some meaning, which change and push the culture of coffee forward. For us to shift the world’s axis, if even just by a hair… that would be exciting.

Now on our pour-over bars: PERU SL9 wshd from LISBETH PAREDES QUISPE. Juicy, sweet, full-bodied, deeply textured. A round, generous acidity that seems to reach every part of the palate. Ripe red plums. A lot of coffee in one sip.
