🎣 We’ve just received this beautiful Hirame (ヒラメ) aka Olive Flounder. This is a flat, oval-shaped fish with both eyes on the same side of its head, it lives in sandy or muddy sea floors in coastal waters, mainly around Japan and Korea.

Mild, slightly sweet flavour with a firm, lean texture. A premium white fish that become a staple in Japanese cuisine and is now a permanent feature on our Sashimi & Nigiri selection 🥢
