안녕하세요.뉴웨이브커피로스터스 입니다.

지난 4월, .roasters 와 함께 로스팅 세미나를 진행했습니다.

이번 세미나는 실제로 여러 프로파일을 비교하며 맛의 변화가 어떻게 나타나는지 직접 경험할 수 있는 자리였습니다.

커피가 가진 캐릭터를 어떤 방향으로 표현할 것인지에 대한 접근이었습니다.

조금 늦은 후기지만, 우리가 사랑하는 커피에 대해서도 다시 생각해 보게 되는 의미 있는 시간이었습니다.

Since each roasting company has a different perspective on optimal roasting, it is difficult to say clearly what is good and bad. However, if a roaster can deeply understand and eliminate results considered ‘improper roasting,’ they will be one step closer to optimal roasting.

We present five roasting profiles to help you better understand the Maillard reaction and the caramelization process.

-01 Normal : Optimal Roasting
-02 Gas Over : Caramelization Max
-03 Too Fast : Maillard Max
-04 Gas Off : Caramelization Minimum
-05 Too Slow : Maillard Minimum

Since the Agtron values ​​of the five roasting samples are very similar and difficult to distinguish by color, cupping makes it easier to confirm the Maillard reaction and caramelization phenomena.
