JOSEPHS Korea is a pop-up restaurant started by the chef Joseph Lidgerwood, which focuses on showcasing Korea’s lesser known ingredients utilising techniques amassed from his culinary career in some of the leading restaurants in Europe, Scandinavia and Asia. JOSEPHS collborates with local chefs and industry professionals including the Korean alcohol sommelier Ji-sung, Chun in order to gain deeper
knowledge of Korean food. The menu for the pop-up in Korea is the outcome of the collaboration and his research, which is based on his deep appreciation of Korean food.
“We want to strip back all the formalness and let the guests relax, enjoy and remember that eating ‘fine dining’ food doesn’t have to be pretentious and it can be fun, playful and enjoyable all at the same time.”
