For two decades, Mauro Colagreco has pushed the boundaries of fine dining at Mirazur in Menton – and he's not stopping now.

From a young Argentine chef arriving in France, at the age of 23, to leading the kitchen at Mirazur, named The World’s Best Restaurant in 2019, Colagreco has always managed to maintain a clear sense of why he cooks.

At the heart of his philosophy is 'circular gastronomy', a term borrowed from the idea of a circular economy. "It's simple, really: it's about working with natural cycles and trying to understand the ecosystem of which the restaurant is a part." he explains. This concept also encompasses the social side of a restaurant too, with implications for diners, staff members and producers alike.

This year, Mirazur marks its 20th anniversary, a milestone the team celebrated in spectacular fashion. An anniversary menu was available to diners for six weeks, in collaboration with iconic chef Ferran Adrià, of El Bulli fame, who took on the role of gastronomic curator.

At this stage in his career, Colagreco has moved into a new phase. Spending less time in the kitchen has allowed him to reflect and take on new responsibilities, with a growing commitment to education and biodiversity.

Dakar NOLA serves up narrative diasporic dining from Senegal to South Louisiana and has been awarded the title of The Best Restaurant in South USA 2026, as part of North America's 50 Best Restaurants sponsored by S.Pellegrino & Acqua Panna.

The vibe at Dakar NOLA is buzzy, full of chatter, warm and welcoming; a true representation of the South Louisiana hospitality. Co-owner Afua 'Effie' Richardson is generally seen greeting guests with a smile and laying a foundation of comfort whilst chef Serigne Mbaye leads a busy kitchen delivering dishes to each table with a familial care.

The menu is reflective of Mbaye's Senegalese roots and each dish tells a story made with intention and love. Dishes include the fonio salad, mixed with West African millet and dressed with citrus-honey vinaigrette, a version of shrimp and grits that substitutes thiéré (a Sengalese couscous) and a beautiful jollof.

Mon Lapin is a casual Canadian restaurant serving natural wines and creative plates and was named The Best Restaurant in East Canada 2026, as part of North America's 50 Best Restaurants, sponsored by S.Pellegrino & Acqua Panna.

In 2018, Mon Lapin was opened in Montreal's Little Italy neighbourhood. The restaurant offers a sophisticated French-Italian take on local ingredients. The team is run by husband and wife Chef Marc-Olivier Frappier and sommelier, Vanya Filipovic and working alongside them is co-chef Jessica Noel.

Mon Lapin is the epitome of casual-on-the-outside, brilliant-on-the-inside, something Montreal is famous for, and with a menu that changes daily and a winning wine list available for sampling, diners are expected to gain a unique experience.

For David Jackman, head chef and owner at Wildweed in Cincinnati, winner of the One to Watch Award, as part of North America's 50 Best Restaurants 2026, foraging is integral to his process of connecting to the land.

Jackman talks us through his trick of pulling from the microfibres to avoid the sting of a nettle when harvesting, as well as his delicious recipe featuring nettle cake, foraged from his own land. Dishes like these aid in Wildweed's mission to perfect seasonally focused dishes.

SingleThread in Healdsburg offers super-sustainable Japanese-influenced cooking and has been named The Best Restaurant in West USA 2026, as part of North America's 50 Best Restaurants, sponsored by S.Pellegrino & Acqua Panna.

Set in the Californian wine country, SingleThread is led by husband and wife Kyle and Katina Connaughton. Kyle is head chef whilst Katina farms the 24-acres of land from which most of the produce is sourced.

The exquisite tasting menu has a strong Japanese influence and features fresh produce, some rarely seen outside of Japan. The restaurant's main aim is to maintain sustainability throughout, from agricultural practices to food waste, and even storytelling.

At award-winning Dubai restaurants, Orfali Bros and Three Bros, dessert is more than just a sweet way to round off the meal.

For Omar and Wassim Orfali, pastry is a way of preserving memories of their Syrian childhood and embracing the dynamism of Dubai, and it is for this reason they were awarded the Middle East & North Africa's Best Pastry Chef Award 2026, sponsored by Valrhona, as part of the Middle East & North Africa's 50 Best Restaurants.

The brothers grew up around the smell of homemade pistachio baklava, freshly baked bread and syrup-soaked sweets, and were heavily influenced by walking through the old souks, witnessing artisans making sweets by hand. Their rise to fame comes at a time when Dubai is one of the world's most exciting dessert destinations, with global sensations like Dubai chocolate and concepts like Brix, a dessert-tasting menu restaurant by Chef Carmen Rueda Hernandez.

At their own restaurants, traditional Syrian ingredients and techniques sit alongside contemporary pastry craftsmanship to ensure desserts are nostalgic and culturally rich. The brothers work with flavours to intensify depth and complexity, as well as making everything from scratch, from nut pastes and tahini to jams, syrups, ferments and creams.
