Why should coffee rest after roasting? 🤔

🔥 The moment the bean hits the fire, a whole chemical party happens inside:
• New flavors are created.
• Aromatic oils are released.
• Gases (especially CO₂) get trapped inside the bean.

But here’s the twist: if that gas doesn’t have time to escape slowly, it will ruin your cup ☕.

🚫 Drinking coffee right after roasting means:
• Harsh, bitter taste.
• Flavors are flat—you can’t tell Ethiopian from Brazilian.
• Espresso crema looks fluffy but dies quickly.
• Turkish coffee feels “muddy” and unbalanced.

📆 So, how long should you wait?
• Light roast: 3–4 days.
• Medium roast: 5–7 days.
• Dark roast: 10+ days.
