Carrots didn’t start like this.
They began as something far more wild, bitter, and a little chaotic. Pale roots, rough, medicinal.
Then, over a thousand years ago in Persia, what is now Iran and Afghanistan, farmers began to shape them. Purple. Yellow. Bold. Imperfect. Full of attitude.
Not sweet. Not polished. But alive.
Centuries later, the Dutch stepped in. They refined them, softened them, and turned them into what the world now expects.
And just like that, the narrative changed.
But it wasn’t always this way.
What we hold today is history in layers.
Purple rebellion. Yellow earth. Orange control.
The carrot went from punk… to mainstream.
Our new carrot dish is about all of this.
The layers of history. The tension between nature and humankind.
The quiet crisis that shapes what we eat, and what we forget.
These are the whispers passed through cultures, through hands, through time.
And that’s what we’re embedding into our journey.
