Pilau recipe:
Ingredients:
2 cups rice
6 medium potatoes (peeled and halved)
2 onions sliced
1 capsicum diced (optional)
3 Cardamom Pods
1/2 teaspoon whole black pepper
2 - 3 sticks whole cinnamon
2 whole cloves
1 teaspoon whole cumin
1 kg Mbuzi Mix (pre-boiled)
1 tablespoon garlic ginger paste
3 tablespoon HalisiFry Oil
1 teaspoon ghee (optional)
3 cups water or stock from the boiled Mbuzi mix
Sunsalt to taste
Preparation:
In pot or ‘sufuria’ over medium heat add HalisiFry oil with the teaspoon of ghee and then go in with the onions, sauté for a minute don’t brown the onions, then go in with the whole spices sauté until fragrant and mix well then add the garlic ginger paste, capsicum and potatoes cook for about 2 minutes, Add the boiled meat continue to stir well until flavours combine then add in the rice mix well then go in with the 4 cups of water, and bring it to a boil, adjust seasoning with Sunsalt and cook until its almost dry and water has evaporated cover and let it steam on low heat for 15mins, then fluff up the rice and serve with kachumbari and pilipili.
