４月上旬OPEN予定で開業準備中です。
いつかここでカフェを開きたいと思い描いて
ル・コルドン・ブルーでお菓子作りの基礎を学び
その後、シドニーでカフェを学びたくて2001年に渡豪
カフェやケーキ屋さん、レストランで働きその後、オージー
の旦那と結婚し二児の母です。
日本でカフェ開業を目指し家族で帰国、それからも
時間が掛かってしまったけど、ようやくここまで来る事が
出来ました。
Cafe Oz？ オーストラリア料理？どんな料理なの？って
思われる方も多いいかと思います。
オーストラリアは移民の国、色々な国の料理が食べられます。
主人も、生まれも育ちもオーストラリア。でも両親はギリシャ人、
親戚にはイタリア人、なぜかインド料理レストランを経営していた
叔父。そんな多国籍の中で育ち、シェフをしている主人が料理担当、
私がデザートを担当。 オーストラリア料理と言うより、オーストラリアで食べられ
る各国の美味しい料理を提供して行きたいと思っています。
時間が掛かってしまったけど、長年温めてきた目標がもうすぐ実現する事が出来ます。
オーストラリアに居る様な雰囲気で、美味しい料理とコーヒー、ワインでニコッと出来るカフェを作って行きたいと思います。
A WORD FROM THE CHEF
Born and raised in Australia in a Greek household there was never a shortage of food. The European cuisine always brought us together as a family especially through the festive seasons and family gatherings. Australia has a wide variety food cultures there is no real traditional Australian food or cuisine, although it has been said that food habits and techniques evolve from the British and Irish with a heavy influence of migrants from all over the world settling in Australia. So there is never a problem learning or finding the ingredients to master the perfect recipe. With a European back round Mediterranean flavours have always been close to my heart I also find it an enjoying challenge making things by hand from the very beginning and learning about them. I now have the opportunity of using fresh local ingredient and great quality produce to serve home-style menu with an Australian twist.
