Our July Feature: Peru Café Orquídea

一粒のコーヒー豆には、生産者が積み重ねてきた時間、高地を渡る風、豊かな土の香り、そしてまだ目覚めていない個性が宿っています。

豆は、最初から完成しているわけではない。

私は炎の前に立ち、一粒一粒の声に耳を傾けながら、その豆が持つ甘さを探し、香りを育てていきます。

ペルー・カフェオルキデアは、自らを派手に主張する豆ではありません。
だからこそ、その静かな個性は焙煎によって美しく映し出される。

今日も私は炎の前で、この豆がもっとも輝く瞬間を待ちつづけ、炎は豆に命を吹き込み、煙はその香りを磨き上げる。

そして、一杯のコーヒーの向こうに、ペルーの風景までが浮かび上がる。

Every coffee bean carries the time of its grower, the breeze of the highlands, the scent of its soil, and a character still waiting to awaken.

April’s Selected Bean: Ethiopia Sidamo

エチオピアの高地の豆は、
手に取ればすぐにわかる。
軽やかで、しかし芯は細く締まっている。

投入はやや低めから。
急激に熱を入れない。
この豆は繊細だ。
立ち上げを誤ると、すぐに表情を失う。

水分の抜けは穏やか。
香りが青から花へ移る、その境目を見逃さない。
一ハゼは軽く、弾むような音。

ここで欲張らない。
伸ばしすぎれば、フローラルは消える。
詰めすぎれば、酸が濁る。

狙うのは、透明な輪郭。

カップに落とすと、
まず立つのは繊細な香り。
ジャスミンのように、細く長い。

続いて、柑橘の酸。
だが尖らない。
あくまで整っている。

ボディは軽い。
だが、薄くはない。

甘みは上に抜ける。
残すのではなく、消えていく美しさ。

焙煎で作り込む豆ではない。
引き出すだけでいい。

シダモは、
火の強さではなく、
“引き際”を問う豆だ。

From the highlands of Ethiopia,
Sidamo beans are light in weight but have a refined internal structure.

For roasting, we start with a slightly lower charge temperature.
Heat is applied gently—too much too early will damage its delicate character.

Moisture release is gradual,
and careful attention is needed as the aroma shifts from green to floral.
First crack is soft and light.

Control is key at this stage.
Extending the roast too far will mute the floral notes,
while shortening it too much will leave the acidity unbalanced.

The goal is clarity.

In the cup,
you’ll first notice a delicate floral aroma,
similar to jasmine.

This is followed by a clean citrus acidity—
bright, but not sharp.

The body is light,
yet not thin.

The sweetness is subtle and lifts gently,
rather than lingering heavily.

This is not a coffee to shape aggressively in roasting,
but one to guide carefully.

Sidamo is a coffee that rewards precision—
especially in knowing when to stop.
