1. Egoma (local black sesami) Tofu with miso & Yuba with abalone & grilled egg plant

4. Roasted duck, Jellied conger eel

Our chef and the owner of the house prepared fresh sakes from Takayama & Hida as well. The menu was:

1. Firefly squid/Roasted Duck with mountain vegetable called Kogomi, Edamame Tofu
2. Sahimi (Seabream, Striped Horse mackerel) / Roasted Hida Beef
3. Soup using Uba with Hiradake mushroom, white turnip
4. Pork / Red sea bream with princess bamboo shoot & Jujube

This catering was arranged in a perfect timing for the guests because today is in the middle of golden week, the biggest official holidays in Japan, and so many people were not able to find restaurants to eat due to lots of vistors.

For our guests, Kaiseki, a traditional multi-course Japanese dinner, was ready to start at the hotel by the time they requested to start.

Our chef and the owner of the house prepared fresh sakes from Takayama.

The menu today aftre green tea was :

1. Firefly squid and O***a
2. Edamame Tofu
3. Sahimi (Flounder, Tsuna, Greater amberjack)
4. Soup with mushroom, turnip, and Seabream

After sightseeing in a cold day, Kaiseki dinner was ready to start at your hotel by the time guests were back there.

Our chef and the owner of the house prepared a very fresh sake right out of breweries in Hida Furukawa & Takayama as well.

For the first time, we offered Macha (green tea) as welcome drinks with our staff in KIMONO (Japanese traditional clothes).

It was our pleasure to see the guests very happy with our service. We believe Kaiseki is the best way to enjoy authentic Japanese dishes with seasonal products from this region.

After sightseeing in a cold day, Kaiseki dinner was made ready by our chef to start at your hotel by the time guests were back there.

Our chef prepared a very fresh sake right out of breweries in Hida Furukawa & Takayama as well as Setsuchushu (a sake aged in a snow storehouse!).

The menu of the Kaiseki yesterday was:
1. Goma-tofu with snow crab
2. Grilled Shirako with edible chrysanthemum
3. Sahimi (Balck porgy, Tuna, winter yellowtails, all caught in nature)
4. Soup with Oyster and seasonal Hida vegi
5. Grilled fish (Sawara Yuanyaki)
6. Simmered dish (very first bamboo shoot in Japan from Miyazaki-ken & roasted duck/Abalone)
7. Hida beef steak / Templa
8. Sushi (ark shell, seabream, Tuna)
9. Dessert (seasonal fruits from Hida)
