サウスパーク(South Park)－南インドケーララの家庭料理

サウスパークは、ケーララの伝統的な家庭の味を体験できるレストランです。
私たちスタッフの故郷の祖母や母の珍しくて貴重なレシピをそのまま再現し、異国情緒あふれる一皿を日本の皆さまにお届けします。

ケーララはとても小さな州ですが、同じケーララ州の中でも地域ごとにそれぞれの家庭の味を持っています。
例えば、ケーララでは定番のカレー「ミーンチャッティカレー（陶器の器で作るフィッシュカレー）」も地域によって作り方が異なります。
多くの地域では、風味づけに'Kudam puli'（ガルシニア）を使いますが、地域によっては'Puli'（タマリンド）を使います。
材料も同様に、トマトだけを使うところ、ケーララの料理には欠かせないココナッツを使うところなどさまざまです。

以前スタッフの1人が、ケーララの中心地カダットハーアシー（Kaduthuruthy）の叔母の家を訪問したときに、彼女が作ってくれたチキンローストが、今までに食べたどのチキンローストとも違う味で、それが驚くほど美味しくて、今でも強く記憶に残っています。
私たちが作る一皿、一皿の奥にあるそれぞれの物語を、ぜひ皆さんに感じていただきたいと思っています。

私たちは、身体にやさしい家庭料理をお届けするために、材料やスパイス選びから、衛生的な調理法まで、細心の注意を払っています。
ケーララのあたたかい家庭の物語を料理を通して「神の国」から「日出ずる国」へ伝える、それが私たちの試みです。

South Park is a place where you will experience the flavours of traditional homely Kerala cooking. We would like to bring you rare and unique recipes from our hometown, exotic dishes which our grand mothers and aunts made and those from our own home. It is our humble attempt to introduce an array of these great dishes from "Gods Own Country" to "Land of the rising sun".

The fish curry was absolutely the best! The sambar, meals, and every dish we tried were outstanding. It was one of the most authentic and delicious Kerala meals we have had in Japan. Everything was fresh, flavorful, and felt just like home-cooked food. Highly recommended, and we will definitely visit again!
