IWA — beyond what the eye can see.
At Sushi m, we serve IWA in a black tasting glass.
Why black?
Because the moment we see the color of a sake, we unconsciously begin to imagine how it should taste.
By taking away that visual information, we allow the first aroma, the first taste, and the first impression to speak for themselves.
Created in Toyama by Richard Geoffroy, IWA is built through Assemblage — bringing together different rice, yeasts, and brewing elements to create not uniformity, but harmony.
Different elements.
Different expressions.
One composition.
The black glass is not simply a vessel.
It is a way to experience IWA without preconception — through aroma, texture, flavor, and your own senses.

富山でRichard Geoffroyが造るIWAの核にあるのは、Assemblage(アッサンブラージュ)という考え方。
異なる米、酵母、醸造の要素を重ね、ひとつの調和をつくり上げていく。
黒いグラスは先入観から離れ、香り、質感、味わい、そして自分自身の感覚でIWAと向き合うためのグラスです。
