The cuisine is an exquisite Chinese course featuring ""small portions of many dishes (approximately 25 items),"" themed around the traditional Chinese ""Manchu-Han Imperial Feast.""

ロゼワイン
2024 Bardolino Chiaretto

二杯目にご用意したのは、イタリア・ガルダ湖のほとりで造られるロゼワイン「バルドリーノ・キアレット」。

現地では、生ハムや魚介のフリットなど、食事の始まりを彩る前菜とともに楽しまれている一本です。

hakubiでは、その発想を中華へ。

合わせるお料理は
・炭火蜜叉焼（チャーシュー）
・香酥魚翅餅（フカヒレパイ）
・金沙玉米蝦（エビとトウモロコシの金沙）

香ばしく焼き上げた叉焼、旨みを包み込んだフカヒレパイ、そして揚げた海老ととうもろこし『ゴールドラッシュ』に、香ばしい金沙をまとわせた一皿。

ロゼワインのやさしい果実味とみずみずしい酸味が、それぞれの香ばしさや甘みを心地よく引き立て、次のひと口へと自然につないでくれます。

「肉だから赤」「魚だから白」ではなく、一皿の味わいに寄り添う一杯を。

A dish featuring fragrant, grilled char siu, a flavorful shark fin pie, and fried shrimp and corn (Gold Rush variety), all coated in fragrant golden sand.

The gentle fruitiness and refreshing acidity of the rosé wine pleasantly enhance the savory and sweet flavors of each dish, naturally leading you to the next sip.

Rather than ""red wine with meat"" or ""white wine with fish,"" we offer a wine that perfectly complements the flavor of each dish.

グラスの内側にリモンチェッロを薄くまとわせ、
その上からスペインのスパークリングワイン『カヴァ』を注ぎます。
口元に近づけた瞬間、爽やかなレモンのアロマが立ち上がり、ひと口目は軽やかで華やかな印象に。

合わせるお料理は
・魚子醬米粉(キャビアビーフン)
・椒麻鱚甜豆(キス椒麻ソース)

キャビアのほどよい塩味とビーフンのやさしい旨みに、爽やかなカヴァがぴったり。

Cava × Limoncello

A thin layer of limoncello is applied to the inside of the glass,
and then Spanish sparkling wine, Cava, is poured over it.

The moment you bring it to your lips, a refreshing lemon aroma rises, leaving a light and elegant impression with the first sip.

The accompanying dishes are:
・Caviar Rice Noodles
・Whiting with Sichuan Sauce

The refreshing Cava perfectly complements the moderate saltiness of the caviar and the gentle umami of the rice noodles.

The lemon aroma spreading from the glass enhances the flavor of the Sichuan sauce paired with the whiting,
and leaves a pleasant aftertaste with each sip.

ひんやりと落ち着いた空気に包まれた、温度・湿度が完璧に保たれたこの空間には、世界中から厳選された約600本ものワインが静かに眠っています。

In the basement of Hakubi, there is a special wine cellar created by renovating a former air-raid shelter.

Enveloped in a cool, tranquil atmosphere, this space, where temperature and humidity are perfectly maintained, quietly holds approximately 600 bottles of wine carefully selected from around the world.
