今更ですが、祇是の料理哲学をご紹介
兵庫県という土地にフォーカスを当て、
和食を礎として作り上げる料理。
その土地に根付く食材、文化、歴史。
すべてに敬意を払いながら、
一皿一皿に背景と物語を落とし込む。
寿司の歴史を辿り、
横浜出身で現在はロンドンで活躍する
師・遠藤和年氏から受け継いだ技法を礎に。
明石、淡路島、日本海側など、
豊かな漁場から届く魚と向き合い、
神戸という土地で、シェフ・キャスパーにしかできない寿司を表現する。
コースは寿司も含めた16品。
しかし、祇是は寿司屋ではないと彼は言う。
寿司はシェフ・キャスパーの原点であり、
祇是のシグネチャーであると同時に
寿司以外の料理に対しても彼のアイデンティティとスーシェフのアイデンティティが混ざり合うからである。
スーシェフはイタリアン出身。
大阪の老舗で研鑽を積み、
“その土地の食材を活かす”という
地方料理の思想を体現。
さらに、日本酒や焼酎といった日本のお酒にも深く精通し、
酒を単なる添え物ではなく、
「このソースにはこの酒、デザートにはこの酒」など料理自体に使う酒も一皿ごとに最適な酒を選び、素材と重ね、引き出し、
時には輪郭を与える要素として用いることで、
味わいに奥行きと広がりを生み出す。
それぞれの料理には、
作り手の歩んできたストーリーが重なり、初めて祇是の料理が出来上がる。
At Gize, our cuisine is built upon Japanese culinary tradition,
with a deep focus on the land of Hyogo.
Rooted in local ingredients, culture, and history,
each dish is crafted with respect—layering background and story into every plate.
Tracing the history of sushi,
and grounded in techniques inherited from Chef Kazutoshi Endo,
a Yokohama-born master now based in London,
we continue to build on that foundation.
Working with fish sourced from the rich waters of Akashi, Awaji Island, and the Sea of Japan,
Chef Casper expresses a form of sushi that can only be realized here in Kobe.
The course consists of 16 dishes, including sushi.
Yet, Gize is not a sushi restaurant.
Sushi is Chef Casper’s origin,
and the signature of Gize—
but it is through the interplay of his identity and that of the sous-chef
that the full expression of the cuisine takes shape beyond sushi.
The sous-chef, with a background in Italian cuisine,
trained at a long-established restaurant in Osaka,
embodying the philosophy of regional cooking—
bringing out the best of local ingredients.
With deep knowledge of Japanese sake and shochu,
Drinks is not treated as an accompaniment,
but as an integral component of the dish itself.
“This sake for this sauce, this spirit for this dessert”—
each element is carefully selected and woven into the composition,
enhancing, drawing out, and at times defining the character of the dish,
creating depth and dimension in every bite.
Each plate reflects the stories and journeys of those who create it—
and through that layering,
the cuisine of Gize comes to life.
