At first glance, Edomae sushi appears simple: just fish and vinegared rice.
It is often seen as a world governed by experience and intuition.
Yet beneath that simplicity lies a clear and uncompromising rule.
By using salt, water, and vinegar, the cells of the fish are carefully conditioned.
Through time, the completeness of its umami is elevated.
By stripping away everything unnecessary and drawing out only what remains essential,
a fleeting harmony is created in the mouth.
This is the rule known as
“The Ultimate Subtraction.”
Its true meaning is this:
to create a state that places the least possible burden
both on the fish and on the person who eats it.
That is why flashy seasoning — “addition” — was considered the wrong path.
Excess was seen as a betrayal of the craft.
