يتركب العدس في قيمته الغذائية من 28% بروتين ، و58% مواد كربوهيدراتية، و 1% دهن، وأيضا مليء بالمعادن .

العدس نبات صحي وهو يعتبر من الأطعمة التي تعطي طاقه للإنسا، حيث يحتوي على قيمة كبيره من البروتين النباتي .

العدس به سعرات حرارية عاليه لذلك فهو يساعد على نمو الإنسان وتقوية الجسم والأسنان.

وأفضل طريقه لأكل العدس هي أن يكون شوربة ويُأكل في مقدمة الطعام.
إذا أكل العدس مع قشوره فهو مفيد جدا لمن عندهم ضعف بالأعصاب حيث انه مقوي للجهاز العصبي.

العدس مليء بالحديد الذي يساعد الجسم على صنع هيموغلوبين وتقوية الدم لزيادة صحة الجسم، وبه كالسيوم يساعد على نمو الأطفال .

إذا كان الإنسان نباتي وأكل وجبة عدس بدون رز أو خبز فيعتبر أنه وصل لجسمه وجبة بروتين كاملة وغنية.

لمن يعانون من الإمساك فقشور العدس إذا أُكلت عن طريق شوربة ذلك يشفيهم
