Crunch into flavor with these Crispy Taco Rice Cups 🌮🧀🔥
Total time: 45 minutes
Prep time: 15 minutes, Cook time: 30 minutes
Ingredients for 6 servings:
3 cups cooked leftover rice
1 lb ground beef
1 packet taco seasoning (1 oz)
1/3 cup water
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup salsa
1/2 cup crushed tortilla chips
Nonstick cooking spray
Salt to taste
Pepper to taste

12-cup muffin tin
Step 1/4
1 lb ground beef - 1 packet taco seasoning - 1/3 cup water - Salt to taste - Pepper to taste.
In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, add taco seasoning and water, then simmer for 5 minutes. Season with salt and pepper.
Step 2/4
3 cups cooked leftover rice - 1/2 cup shredded cheddar cheese.
In a bowl, mix rice with half the shredded cheddar cheese. Spray the muffin tin with cooking spray. Press about 1/4 cup of the rice mixture into each muffin cup to form a base with a well in the center.
Step 3/4
Cooked taco beef - 1/2 cup shredded cheddar cheese.
Spoon taco beef into each rice cup, then sprinkle remaining cheddar cheese on top. Bake at 375°F for 20 minutes or until tops are golden and crispy.
Step 4/4
1/2 cup sour cream - 1/4 cup salsa - 1/2 cup crushed tortilla chips.
Cool slightly. Top each rice cup with a dollop of sour cream, a spoonful of salsa, and a sprinkle of crushed chips just before serving.
