La ricetta di Nonna Bruna
Ravioli di brasato di manzo con ricotta vaccina
Una pasta fatta in casa, un ripieno ricco e saporito e quel profumo di brasato che sa subito di cucina di famiglia.
Nonna Bruna le dosi le ha sempre fatte a occhio. Noi abbiamo provato a tradurre quel suo “quanto basta” in quantità, per permettervi di rifare la ricetta a casa.
Ingredienti per 2 persone
Per la pasta fresca
* 150 g di farina 00
* 1 uovo intero
* 1 tuorlo
Per il ripieno
* 180–200 g di manzo da brasato
* 30 g di cipolla
* 20 g di sedano
* 30 g di carota
* 100 ml circa di vino rosso
* 70 g di ricotta vaccina
* 20 g di Grana Padano grattugiato
* 1 pizzico di noce moscata
* 1 cucchiaio di olio extravergine di oliva
* sale q.b.
* pepe q.b.
Per condire
120–150 g circa del fondo di cottura del brasato
Grana Padano grattugiato, a piacere
Procedimento
1. Prepariamo il brasato
In una casseruola fate rosolare il manzo con l'olio extravergine di oliva, la cipolla, il sedano e la carota. Sfumate con il vino rosso e proseguite con una cottura lenta, fino a quando la carne sarà molto morbida e saporita.
Tenete da parte una parte del fondo di cottura: servirà per condire i ravioli.
2. Prepariamo il ripieno
Tritate finemente la carne cotta e lasciatela intiepidire. Aggiungete la ricotta vaccina, il Grana grattugiato, un pizzico di noce moscata, sale e pepe. Mescolate fino a ottenere un composto morbido ma abbastanza consistente da poter essere utilizzato come ripieno.
3. Prepariamo la pasta
Disponete la farina a fontana, aggiungete l'uovo e il tuorlo e lavorate fino a ottenere un impasto liscio ed elastico. Lasciatelo riposare per circa 30 minuti.
Stendete quindi la pasta molto sottile e ricavate delle strisce larghe circa 10 centimetri.
4. Formiamo i ravioli
Disponete sulla metà della striscia dei piccoli mucchietti di ripieno, lasciando uno spazio regolare tra uno e l'altro.
Ripiegate la pasta sul ripieno e premete delicatamente con le dita intorno a ogni raviolo, facendo uscire bene tutta l'aria dall'interno.
Tagliate i ravioli con una rotella tagliapasta o con l'apposito stampo.
5. Cottura e condimento
Cuocete i ravioli in abbondante acqua salata. Una volta pronti, scolateli delicatamente e conditeli con il fondo del brasato precedentemente tenuto da parte e, se vi piace, una spolverata di Grana.
Con queste quantità otterrete indicativamente 12–16 ravioli, a seconda della dimensione.

La pasta ripiena permette di giocare con i prodotti e con le stagioni. Nonna Bruna ama alternare il brasato con altri ripieni della tradizione: r**e rosse e ricotta, spinaci e ricotta oppure radicchio rosso e Taleggio.
Perché le ricette di casa non sono mai scritte nella pietra: cambiano con quello che offre la stagione, con quello che c'è in dispensa e, soprattutto, con quel famoso “quanto basta” che solo le nonne sanno dosare alla perfezione.

Nonna Bruna has always measured ingredients by eye. So we’ve tried to turn her famous “quanto basta” – “just enough” – into actual quantities, so you can recreate her recipe at home! ❤️
👩🍳 Ingredients for 2 people
For the fresh pasta:
• 150 g 00 flour
• 1 whole egg
• 1 egg yolk
For the filling:
• 180–200 g beef for braising
• 30 g onion
• 20 g celery
• 30 g carrot
• approx. 100 ml red w**e 🍷
• 70 g cow’s milk ricotta
• 20 g grated Grana Padano
• a pinch of nutmeg
• 1 tbsp extra virgin olive oil
• salt and pepper to taste
For serving:
• 120–150 g of the braising sauce
• grated Grana Padano, to taste
👩🍳 METHOD
1. Prepare the braised beef
Brown the beef in a saucepan with the extra virgin olive oil, onion, celery and carrot. Add the red w**e and cook slowly until the meat is wonderfully tender.
Remember to set aside some of the cooking juices: they will become the sauce for the ravioli.
2. Prepare the filling
Finely chop the cooked beef and allow it to cool slightly. Add the ricotta, grated Grana Padano, a pinch of nutmeg, salt and pepper. Mix until you have a soft but firm filling.
3. Make the fresh pasta
Place the flour on your work surface, make a well in the centre and add the whole egg and yolk. Knead until smooth and elastic, then leave to rest for about 30 minutes.
Roll the dough very thinly and cut it into strips approximately 10 cm wide.
4. Shape the ravioli
Place small spoonfuls of filling along one half of each strip, leaving some space between them.
Fold the pasta over the filling and gently press around each mound, making sure to remove all the air trapped inside.
Cut into ravioli using a pasta wheel or ravioli cutter.
5. Cook and serve
Cook the ravioli in plenty of salted boiling water. Drain gently and dress them with the reserved braising sauce.
Finish with a little grated Grana Padano if you like.
With these quantities you should make approximately 12–16 ravioli, depending on their size.

There is something wonderful about filled pasta: you can change the filling according to the season and whatever you have in your kitchen.
Nonna Bruna loves alternating her braised beef ravioli with beetroot and ricotta, spinach and ricotta, or red radicchio and Taleggio cheese.
Because family recipes are never set in stone. They change with the seasons, with what’s in the pantry and, above all, with that famous “quanto basta” that Italian grandmothers somehow always know how to measure perfectly. ❤️🇮🇹
