Ogni cambio menù mette a dura prova la tempra dei nostri chef. Ci sono momenti di stallo, altri di confusione e altri ancora di insoddisfazione, tutto rincarato dal tempo che sfugge dalle mani. Ma alla fine, dopo aver trasformato, tradotto e tradito un numero infinito di volte, si arriva sempre ad assaporare una dolce soddisfazione.

Appena “Anguria, ginepro verde, sambuco” viene servito in sala, con una generosa dose di granita al sambuco con infusione di geranio rosa, quasi d’istinto, ci si lega a quella familiare dolcezza acquosa propria dell’estate. Al primo boccone, tutta questa sicurezza viene spiazzata: il palato spazia da note dolci a sapide, da acide a balsamiche, dando una nuova veste frizzante alle nostre certezze.

Questo piatto si presenta come quell’amico che, anche se non conosce nessuno, è sempre a suo agio, ma non appena prende confidenza rivela il suo lato più estroverso.

Un piatto che vive di gesti, sequenze e fumo.

La coda di rospo viene cotta intera alla brace, glassata con il suo fondo di pesce e spolverata con alga nori tostata. Accanto, il porro segue lo stesso fil rouge dell’affumicatura, introducendo la complessità del torcione di fegato di rospo, accompagnato da una bernese al prezzemolo e boccioli di aglio in pickles.

The monkfish is cooked whole over live coals, glazed with its own fish reduction, and dusted with toasted nori seaweed. Alongside, the leek follows the same thread of smokiness, introducing the complexity of the monkfish liver torchon, accompanied by a parsley béarnaise and pickled garlic buds.

Una volta a tavola, l’intenso verde bosco della salsa di centocchio si mischiava ai sentori di erba tagliata su cui poggiava la conchiglia con estratto di carletto. A quel punto stava a voi decidere quanto aromatizzare le vostre pipe.

I nostri chef stanno costruendo la loro cifra stilistica attorno a due nuclei principali: la scelta scrupolosa degli ingredienti da piccoli produttori locali e la loro rielaborazione attraverso lo studio delle diverse sfumature gustative.

Ogni movimento si rende necessario e immutabile. Ogni oggetto si carica di sacralità. Insieme, tessono quel rituale di transizione che è la preparazione.

Il gusto leggero di “Asparago bianco, baccalà, lemongrass” si è unito alla fotografia in ombre delicate.

Niente di aggressivo o spiazzante domina quindi questo piatto; il suo unico proposito è quello di prendere per mano e mettere a suo agio. Un inizio accogliente prima delle portate principali.

Finali in equilibrio sulla dolcezza per giornate sempre più afose.

Com’è caratteristico dei nostri chef, niente dev’esser mai troppo dolce. Ce lo dimostrano anche questa volta in “Zenzero, zafferano, miele”.
