La Limonaia, all’inizio, era una casa.
Lo era anche per me.
Pochi tavoli. Io in cucina, mia madre che dava una mano in sala. Molti dei mobili, dei quadri e degli oggetti che sono ancora qui venivano dalle nostre case.
Poi siamo cresciuti. Abbiamo studiato, cambiato, imparato a cucinare meglio e ad accogliere meglio.
Ma una cosa è rimasta la stessa.
Chi entra qui viene a stare da noi.
Credo che il senso del nostro mestiere sia tutto lì: aprire una porta, far sedere qualcuno a tavola e prendersene cura per qualche ora.
La cucina è uno dei modi che abbiamo scelto per farlo.
Un ristorante può avere grandi piatti, grandi vini, una bella sala. Ma senza le persone rimane soltanto un luogo.
Sono le persone a farne un ristorante.

In the beginning, La Limonaia was almost a home.
A few tables. Me in the kitchen, my mother helping in the dining room. Many of the pieces of furniture, paintings and objects that are still here came from our homes.
Then we grew. We studied, changed, learned to cook better and to welcome people better.
But one thing has stayed the same.
Whoever walks through the door comes to spend some time with us.
I think the meaning of our work is all there: opening a door, inviting someone to sit at the table, and taking care of them for a few hours.
Cooking is one of the ways we have chosen to do that.
A restaurant can have great food, great wine, a beautiful dining room. But without people, it remains just a place.
It’s the people who make it a restaurant.
