Climb to the old Saracen Tower, raised in the sixteenth century to watch the coast, and find inside it a room given over to something quieter. Nagori is Fulvio Pierangelini's meeting of Sicily and Japan, two islands set far apart yet bound by the same closeness to the sea, the same reverence for fish and for what the water gives.

The idea is not fusion in the usual sense. Rather than lay exotic ingredients over one another, the kitchen looks at Sicilian produce through Japanese eyes, the precision of sushi-making brought to the catch pulled from the Mediterranean that morning. Raw and cooked sit side by side, dishes lifted by greens from the resort's own vegetable garden, everything held to the season and to the place it comes from.

The setting follows the same restraint. The design keeps to Japanese principles of minimalism, spare and calm within the ancient stone, with seating indoors and out. Come at the end of the day, when the piazza around the tower settles and the light goes long over the water, and take a table as the sun drops. Play four days of golf on the Sicilian coast this September, from the 10th to the 13th, as the Sir Rocco Forte Captain's Trophy returns to Verdura. The tournament gathers amateur players from across the world, with Sir Rocco Forte hosting and taking part himself, and Ryder Cup player Colin Montgomerie joining as guest of honour.

The golf runs over two rounds in Stableford format, 36 holes across the Kyle Phillips-designed East Links and West Shore. Both courses trace the estate down towards the sea, the fairways opening onto the Mediterranean as you play, with individual and club leaderboards running side by side.

There is as much off the course as on it. Montgomerie steps onto the practice range for a swing exhibition, then sits down for an evening interview on his career. Sicilian dinners, a gala evening and a closing prize ceremony fill the hours between rounds, with the final day left open to enjoy the resort and its coastline before you travel home.

Step onto the clay this July alongside two of the most familiar faces in Italian tennis. From 21 to 24 July, Fabio Fognini and Flavia Pennetta join the Academies with the Stars calendar at Verdura, bringing four days of coaching to the resort's clay courts above the sea.

Few partnerships could be better suited to the setting. Fognini built his game on red clay, the surface that gave him most of his titles and his win at the 2019 Monte-Carlo Masters. Pennetta closed her career with the 2015 US Open, taking the singles title in the first all-Italian final at a major. Between them they carry a Grand Slam record, a former world ranking at the very top of the game, and the easy, unmistakable character that has made the pair such a draw at home. What they pass on over these days is the detail behind all of it: footwork on clay, the patience a slow surface demands, the reading of a point as it builds.

Train in small groups under their eye, on courts laid out so the Mediterranean sits just beyond the baseline. Mornings on court give way to long Sicilian afternoons, the rest of the resort waiting once the rackets are down: the spa, the sea, a table under the pergola. Sessions run across the four days and suit players looking to sharpen a game already in motion as much as those drawn simply by the chance to share a court with the two of them.

Take the week as it comes, sport in the morning and Sicily in the afternoon, and leave having spent it in good company on the clay.

Spend the middle of the day at the water's edge, where the infinity pool meets the line of the Mediterranean and the two blues run together. Ondina sits between them, an open, easy room given over to long lunches and slow afternoons. There is no ceremony to it. You arrive in a swimsuit and a linen shirt, and you stay as long as the light holds.

The cooking follows the same unhurried logic, simple dishes built on good ingredients. Crispy calamari to begin, or a Niçoise put together as it should be. A lobster sandwich, light and well dressed. For those who want more, a beef burger or spaghetti with clams, the shells still warm from the pan. To finish, a chocolate panna cotta or a scoop of gelato in the shade. Order from your sunbed and have it brought to you poolside, lunch arriving without the need to move from the water.

By late afternoon the kitchen gives way to the pool bar. Drinks replace plates, the sun drops lower over the sea, and there is little to do but watch it go. Daytime dining without the formality, close to the water and shaped by it.
