🇬🇧 Two wonders of Rome. One took eighty years to build. The other I make in twenty minutes.

The Colosseum has been standing for nearly two thousand years and everyone comes to see it. Good for them. But come and eat too, because Rome isn’t just ancient stones. C’è chi er paradiso se lo immagina. Nonno ce l’ha già nel piatto.

Belli de nonno, ve dico ‘na cosa che so’ anni che penso: er paradiso nun ha le nuvole, ha er pecorino. Nun ha gli angeli, ha er pepe nero. E soprattutto nun è lassù, è qui, a Via Magnanapoli, 6. Cacio e pepe fatta come se deve, senza scorciatoie, senza compromessi. Come faceva una volta.

Belli de nonno, c’è gente che ve racconta de la carbonara. Io ve la faccio. Guanciale croccante, uovo cremoso, pecorino che abbraccia ogni spaghetto. Non c’è molto altro da di’. Er piatto parla da solo, e quando tace… be’, significa che avete fatto er vostro dovere.

Belli de nonno, lo sapemo tutti come va: arrivi a Roma co’ na lista de cose da vedé longa così, i Fori Imperiali, er Colosseo, er Pantheon… e poi te ritrovi seduto da Nonno Melo co’ uno Spritz in mano e ‘na fame che nun se po’ descrivé. E sai che ve dico? Avete fatto la scelta giusta. Er Colosseo è lì da duemila anni, ve aspetta. Lo Spritz de Nonno, invece, se fredda.

Se presenta ar ristorante. Barba lunga, cappello, aria da uno che pensa troppo. Me dice: “Nonno, ho fame e ho perso l’ispirazione.”

“Siedete”, je faccio io.

Prima della carbonara: silenzio. Taccuino chiuso. Sguardo nel vuoto.

Dopo la carbonara: ha tirato fuori er taccuino e in dieci minuti ha disegnato l’Uomo Vitruviano.

Io je stavo a guardà e je faccio: “Leonà, ma è bellissimo.”

E lui: “Nonno Melo, era tutto nella carbonara.”
