Calabria is the last part of the Italian boot. It is a southern Italian region surrounded by sea and crossed by mountains. Place rich of tradition and fragrances, its cooking roots maintain a food culture unique in Italy: the red chili peppers, the rich tomatoes’ sauce, cured meet, like capocollo, guanciale, ‘nduja, sopressata, salciccia calabrese…
And we can’t forget cheeses like fresh ricotta, pecorino, provola…
