Italy..🇮🇹 but more than that… Puglia!

There is a reason people come to Puglia once and start looking for property within the week.

It starts with our home town Ostuni, white and blinding on its hilltop, lime-washed walls stacked above fifty million olive trees that stretch to the coast. Then Lecce gets you, all that golden sandstone carved into baroque excess, every façade competing with the next. And then someone drives you to Polignano a Mare and you stand on a limestone cliff above the Adriatic.

The food does the rest. Orecchiette rolled by hand on a wooden board, burrata made that morning a few miles down the road, olive oil that comes from trees old enough to have fed the Roman Empire. Puglia produces more olive oil than any other region in Italy. You taste why.

Paragon 700 sits in the heart of Ostuni’s old town, inside the only red palazzo in Ostuni.

Fifteen rooms, a Michelin Key, the largest private garden in the old town, a pool, and a restaurant where the menu follows the garden rather than the other way around. Bar 700 is the only American bar in Ostuni, and the gin on the shelf was distilled from botanicals grown in our garden.

Come for a few days. You will already be thinking about coming back before you leave.

For the third consecutive year, Boutique Hotel and Spa in Ostuni has been recognised in the MICHELIN Guide (official) global hotel selection - one of just over 9,000 properties across more than 100 countries evaluated on architecture and design, quality of service, personality and authenticity, connection to place, and the balance between price and experience.

The Michelin Key was introduced globally in 2025 as the hotel equivalent of the Michelin Star for restaurants. To hold it two years running, in a selection that now spans the world, means something.

We’re grateful and proud. And quietly setting our sights on two.
