Crispy artichoke with broad beans and chicory. Dried fava beans cooked slowly to a purée the colour of pale honey, faintly earthy beneath wild chicory foraged from the fields around Ostuni. On top, a single artichoke fried until the outer leaves become crispy and the heart stays tender. Older than these walls. Simple and delicious, one of the new dishes created by for the new summer menu.

Cardio Croccant, Fave e cicoria. Il piatto che racchiude tutta la Puglia. Fave secche cotte lentamente fino a diventare una purea color miele pallido, morbida e leggermente terrosa, sotto la cicoria selvatica raccolta nei campi intorno a Ostuni, lasciata sul filo dell’amaro. Sopra, un ca****fo fritto finché le foglie esterne si sbriciolano e il cuore resta tenero.
