At Il Bottaccio, some of the quietest moments happen in between things: before lunch begins, before the room fills, while the light is still moving across the table.

Then the cars left, the garden settled again, and the house returned to its own rhythm.

Thirty-five years in the same kitchen, and the menu still changes with the season. What reaches the twelve tables is decided by the morning: the catch from the coast, the vegetables from the hill, oil pressed a valley away. Nino folds the tortelli by hand, then cooks for the room, not for the pass.

Trentacinque anni nella stessa cucina, e il menu cambia ancora con la stagione. Ai dodici tavoli arriva ciò che viene deciso la mattina: il pescato della costa, le verdure della collina, l'olio franto a una valle di distanza. Nino piega i tortelli a mano, poi cucina per la sala, non per il passe.

La luce di fine giornata sulla pietra, i gerani sulla loggia, un lettino lasciato lì per chi rallenta per primo. Certi pomeriggi la casa non chiede nulla.

Tonight it held four countries at one table, brought together not by a menu but by stories and the pleasure of discovery. Everyone left with a little more than they came with.

✨ Look through the glass. That's where dinner happens.
Beyond the iron and the lemon tree is the Sala della Piscina — the heart of the house, and the reason people who have eaten here once tend to come back. A pool at the centre of the room, enormous wooden trusses overhead, glass and wooden portals running down both sides. 🌿🍋
You eat around the water. In the evening the lights come down, the garden glows through the windows, and sometimes there's a piano.
From out here, in the afternoon, it's just a cool dark shape behind the bougainvillea — a room keeping quiet until it's needed. 🤍
Come back at eight. It's a different place entirely. ✨

✨ Guardate oltre il vetro. È lì che si cena.
Dietro il ferro e l'albero di limoni c'è la Sala della Piscina — il cuore della casa, e il motivo per cui chi ha cenato qui una volta tende a tornare. Una piscina al centro della sala, enormi capriate di legno sopra la testa, portali di vetro e legno lungo entrambi i lati. 🌿🍋
Si mangia intorno all'acqua. La sera le luci si abbassano, il giardino si illumina oltre le vetrate, e certe volte c'è un pianoforte.
Da qui fuori, di pomeriggio, è solo una sagoma fresca e scura dietro la bouganville — una stanza che se ne sta in silenzio finché non serve. 🤍
Tornate alle otto. È un altro posto. ✨

Not at a desk — out here, with a basket, deciding what's good this morning. Peppers, tomatoes, parsley, whatever the season has decided to hand over. Then he goes inside and works out what to do with it. 🌿
Nino Mosca has been Chef and General Manager of Il Bottaccio for more than thirty-five years. The D'Anna family entrusted the house to him, and he's been shaping it ever since — the Tyrrhenian on one side, the woods of the Apuan Alps on the other, and everything served à la carte, in the garden, by the fire, or in your room if that's where you'd rather be.
Thirty-five years in one kitchen. You can taste that. 🤍
Ask him what's good today. He'll tell you honestly. ✨

✨ Lui è Nino, ed è così che nasce il menù.
Non a una scrivania — qui fuori, con una cesta, decidendo cosa è buono stamattina. Peperoni, pomodori, prezzemolo, quello che la stagione ha deciso di concedere. Poi rientra e capisce cosa farne. 🌿
Nino Mosca è Chef e General Manager de Il Bottaccio da più di trentacinque anni. La famiglia D'Anna gli ha affidato la casa, e da allora è lui a darle forma — il Tirreno da una parte, i boschi delle Apuane dall'altra, e tutto servito à la carte, in giardino, accanto al camino, o in camera se è lì che si sta meglio.
Trentacinque anni nella stessa cucina. Si sentono. 🤍
