Honestly the best part of the night is after everyone's done. The plates come back and you can just tell it worked, the colour smeared around, a bit of sauce wiped up, the clean patches where someone clearly wasn't leaving anything behind. Something about Indian food, it looks good even when it's gone.

There are two sides to every plate that leaves our kitchen. On our side it's all heat and noise, flames going up, spices hitting the pan, that kind of controlled chaos that honestly never really calms down. We shot this one from the chef's own point of view so you can see what cooking Indian food actually looks like up close. It's fast and a bit wild back there. Then there's your side. The same dish lands at your table looking completely calm, steam coming off it, none of the madness that went into making it. That's the part we love, really. All that mess in the kitchen reaches you as something quiet. We've been doing this a long time and it still gets us every time. Two totally different views, same plate of food.

We have a running theory. There's a certain kind of evening that only happens over Indian food. The biryani still steaming, the pakoras hot from the fryer, a glass of red catching the light, and somehow the whole world goes quiet for a while. People ask where we disappear to on nights like this. The honest answer is right here, at the same table we always take, in the little Indian restaurant that's felt like home for years. Some people call it going out. We call it coming home. If your location ever starts saying Tandoori Bites a little too often, don't worry. It happens to the best of us.
