There’s a reason this shape is called caramella 🍬
In Italian kitchens, pasta isn’t just about ingredients… it’s about gestures.
And this one is playful on purpose.
The “caramella” was created as a variation of stuffed pasta to do something very specific:
control the bite.
Unlike ravioli, where filling can spread unevenly, the twisted ends of the caramella gently “lock” everything in place.
So when you take a bite… you always get the perfect balance between pasta and filling.
But here’s the detail most people don’t know:
That twist on the sides isn’t just aesthetic.
It slightly tightens the dough, creating tension… which helps the pasta hold its shape better during cooking.
Simple idea.
Precise ex*****on.
