Even in Italy there is a love/hate relationship with Tuscan bread.
The usual everyday bread that most households consume with EVERY meal in Tuscany is made without salt. Yes, that is right - no salt. It's a complicated story from the 12th century (a pretty big fight with Pisa, who "owned" the mouth of the Arno, and hence river access to Florence). So Florence said "stuff you" (in a more Florentine way), " you can keep your rotten salt with massive high duties on it - we won't pay tariffs; we can work around it" (again, with a more Florentine diction). And they did.
Hence, Florentine bread. And it is magnificent.
You may have noticed, we made friends again (for the most part) with Pisans, and got our salt back so everything you eat with the bread is actually salted - so swings and roundabouts, it all works out in the mouth!
Never ever call our bread "bland" - you might start another fight!
