Ba'Ghetto non è solo un ristorante, è un pezzo di storia romana che continua a vivere ogni sera, tra chi torna e chi arriva per la prima volta.

There's a sound that repeats every evening in this corner of the Ghetto: chairs being pulled out, glasses being filled, voices blending between one dish and the next. The same for years, carried forward with the same care as always.

Un piatto, due storie. La concia di zucchine con carne secca di manzo unisce la tradizione giudaico-romanesca alla memoria antica della Sicilia, dove le zucchine venivano conservate in aceto, olio, prezzemolo, basilico e aglio per affrontare lunghi viaggi. Oggi è un classico che portiamo in tavola con lo stesso rispetto di allora.

One dish, two stories. Concia di zucchine with dried beef blends Roman-Jewish tradition with an old Sicilian memory, when zucchini was preserved in vinegar, oil, parsley, basil and garlic for long journeys. Today it's a classic we still serve with the same respect.
