The name Tuscany comes from far away 🌄. It derives from the Latin Tuscia, the land of the Tusci — the Etruscans — and from the Greek Tyrrhenoi 🇮🇹📜. 🥩🔥 The True Story of the Florentine Steak

In Florence, the Florentine steak isn’t just a cut of meat. It’s a piece of history — a Renaissance legacy that still tells our story today.
It all began when this cut was still called “carbonata”, because it was cooked directly over burning coals 🔥 Then came the magic of an encounter: the Florence of the Medici, the Night of San Lorenzo, huge quarters of beef roasting in the squares… and a group of English travelers who, after tasting that marvel, started shouting: “Beef steak!” Florentines, with their sharp ears, turned it into “bistecca” 😄🇬🇧➡️🇮🇹

From that moment, the legend took shape. In the 19th century, the British community in Tuscany kept requesting that same cut, and Pellegrino Artusi officially consecrated it in his famous cookbook, making it the standard for all of Italy.
Today, “a Fiorentina” means one thing only: a T‑bone cut from the loin, with the filet on one side and the sirloin on the other — the same cut known worldwide as T‑bone or Porterhouse.

“Absolutely the best Bisteak I have ever had. The price per kilo was very good. The steak was cooked perfectly, get the potatoes as a side dish to go with the steak. I love this place it’s off the beaten path but worth the walk. You can tell it’s where the locals eat. If you don’t go here you are missing a great experience”

La Trippa alla Fiorentina è una di quelle pietanze che raccontano la città meglio di qualunque libro 📚🔥

Da noi, in San Frediano la si prepara come s’è sempre fatto: un soffritto fine 🥕🧅 trippa tagliata con criterio ✂, pomodoro quanto basta 🍅 e una pioggia di parmigiano che la chiude a dovere 🧀✨
È un piatto che richiede calma, rispetto, e quel passo lento che a Firenze s’è perso solo in apparenza⏳
