Lattuga, mirtilli, dragoncello.

Ci interessava lavorare su un piatto dai toni alti, che avesse al centro la lattuga.
Volevamo però, al contempo che fosse un piatto cucinato, dal morso generoso e guidato.
Abbiamo optato per una rapida l’atto fermentazione della lattuga, che cambia texture e bassa leggermente il pH.
Nation piatto dei toni alti: succoso, verde, acido, mitigato dalla avvolgenza del pesto di dragoncello, slanciato dai tannini del mirtillo. Il finale è balsamico amaro, grazie alle foglie del dragoncello.

We wanted to create a dish built around bright, high notes, with lettuce at its centre.
At the same time, we wanted it to feel unmistakably cooked, with a generous, deliberate bite.
We chose a brief lactic fermentation for the lettuce, allowing it to soften in texture while gently lowering its pH.
The result is a dish of lifted flavours: juicy, green and vibrant, rounded by the enveloping richness of the tarragon pesto and sharpened by the tannins of the blueberries. It finishes with a lingering bitter-balsamic note, carried by the tarragon leaves
