Zucchini and ricotta. On paper, it sounds like the sensible choice on the menu. The one you order because you “don’t want to overdo it” or you’re “trying to keep it light.”
Then it arrives at the table and, as usual, you realize you made up your mind way too soon.
Creamy, full of flavor, and made properly. No ingredients thrown in just to make the dish sound impressive, and no need to reinvent anything.
It’s pasta with zucchini. Except once you taste it, you stop calling it “just pasta with zucchini.”

Come and change your mind.

Zucchine e ricotta, sulla carta sembra quella tranquilla del menu, quella che prendi per “non esagerare”, “per stare leggero”.
Poi arriva al tavolo e capisci che, come al solito, che non era come credevi!
Cremosa, saporita, fatta come si deve. Senza ingredienti messi lì per fare curriculum e senza bisogno di inventarsi niente.
È una pasta con le zucchine. Solo che poi la assaggi e inizi a chiamarla “LA pasta con le zucchine”!

The Buatte have one small flaw: the moment they hit the table, they suddenly belong to everyone.
“I’ll just have a little taste,” says the one who only wanted a burger. “Let’s see what’s inside,” says the one who came here just for the Norma. And then? “Just one last bite,” says the one who never wants to share anything.
A few minutes later, all that’s left in the middle of the table are empty plates, and no one really knows who ate what.
We have a theory: Buatte are meant to be shared. Always.
