“Warm Simplicity” - an unexpected line in our menu, inspired by Asian notes - and by something all of us know deeply: comfort food.

This ramen was born from a simple question: What does Chef love most when she is at home?
The answer is warm, familiar, and honest. A bowl of noodles...

What arrives at the table feels gentle and comforting at first, then it blooms with an intense umami mushroom broth. Then the ritual begins: two small sachets melting in the plate, one with chestnut powder, the other with a fragrant blend of herbs.

Suddenly, warmth becomes depth. Simplicity becomes transformation.

Why is a plant-based kitchen true magic? Because here, so much of life begins before the plate.

At OMNIA, you will encounter ingredients that feel unexpected, unfamiliar, and sometimes truly alive. In our kitchen, SCOBY has been carefully cultivated since 2019. In dedicated trays, koji and tempeh slowly mature. Fermentation in its many forms is one of the most fascinating forces shaping our work — invisible at first, yet full of transformation.

In glass jars, life is quietly bubbling with layers of flavour: from wild strawberries to fragrant alpine herbs. Our homemade kombucha rests and evolves through different infusions, each one carrying its own character, its own voice.

This is why, for our guests, we open the doors to more than dinner: with Chef Aggeliki, we invite you into the kitchen itself, because OMNIA is not simply a restaurant, but an experience, brought to life by the intricate work of a deeply dedicated team of professionals.

"Deep in the Hay". Some dishes become part of a menu. Some become part of a story...

This is one of our most iconic expressions of OMNIA - a dish that reveals itself slowly, somewhere between memory, illusion, and emotion.

At first glance, it seems almost familiar: a shape, a golden yolk, delicate pearls, warmth, the quiet echo of something remembered. But here, the story is told in a different language. A tender heart of mountain potato and truffle, seaweed caviar, and a luminous “yolk” crafted from fermented pumpkin and chamomile. Alongside it, a warm, intense broth with deep roasted notes opens the palate and completes the experience.

This dish carries a personal memory of Chef Aggeliki Charami - a childhood connection to simple farm life, now transformed through the vision of plant-based fine dining.

On 14 June, we open our doors again - high above the clouds, where alpine meadows bloom, horses graze in freedom, colorful plant-based dishes mirror the beauty of the season, and even the sky seems to celebrate in shades of light…

This is our summer: wildflowers in the fields, rainbows over the mountains, fresh air at an altitude of 2,020 meters, and the feeling of being surrounded by the living beauty of the UNESCO Dolomites 🏔️

Our Cappelletti carry the feeling of the mountains that surround us - their air, their stillness, their quiet strength. Inside, a delicate filling inspired by fermented koji unfolds with deep intensity. Around it, a fragrant broth scented with wild sage and alpine artemisia brings the landscape even closer. To finish, notes of gently aged and softly smoked vegetables add another layer — deeper, darker, more mysterious — like an echo of the forest and stone.
