Essere legati al proprio territorio è da sempre un valore fondamentale della nostra cucina.
Altrettanto essenziale è però saper osservare, studiare e lasciarsi ispirare da lavorazioni che, pur arrivando da lontano, sanno esaltare ingredienti che ci appartengono profondamente.
È il caso dei gyoza, una tecnica antica, nata altrove ma capace di accogliere e valorizzare con delicatezza ogni ripieno.
Qui incontrano il nostro territorio attraverso i gamberi di laguna veneziana e il lardo, in un equilibrio che unisce mare e terra.
A completare il piatto, aioli e l’erba cipollina.

At the same time, it is equally essential to observe, study, and draw inspiration from techniques that, although coming from afar, are able to enhance ingredients that belong to us on a profound level.
This is the case of gyoza, an ancient technique, born elsewhere, yet capable of gently embracing and elevating any filling.
Here, they meet our territory through Venetian lagoon prawns and lard, in a balance that brings together sea and land. The dish is completed with aioli and chives.
